The history of the Bouzigues oyster dates back to Antiquity, with flat oysters exported to Rome. Oyster farming evolved in the 19th century, introducing innovative techniques, such as concrete pyramids. After several crises, the Japanese hollow oyster became dominant, accounting for 98% of production.

Today, techniques such as flooding further improve the texture and taste, offering a unique gastronomic experience.
